Cincinnati Style Chili isn’t the healthiest thing on the planet. But it is so tasty! The ethnic melting pot of the Ohio valley region brings us this savory chili-spaghetti with its savory subtle blend of spices more commonly found in middle eastern cuisine. Serve the seasoned simmering pot of finely textured ground beef over spaghetti and top with cheese, onions and/or beans. Oyster crackers soak up the juice that gathers under the spaghetti. So easy! No chopping (unless you want raw onion over top), just organize, measure, mix and simmer. Did I say easy?
Back in the day — the 70s — my cousins hit the chili parlors of Cincinnati before going home after a night of cheap beer. If came in a pitcher or a long neck bottle it was good. Long gone are the nights we spent drinking cheap beer, thank God!
3 Way, 4 Way or 5 Way, this Cincinnati chili is great any old way. This is not your mamma’s bowl of red!
Super, super easy, super quick to throw together with ingredients right from your pantry and super good to serve up any way you want it:
2 Way – spaghetti with chili
3 Way – spaghetti, chili, finely shredded cheddar cheese
4 Way – spaghetti, chili, cheese, chopped raw onions or beans
5 Way – spaghetti, chili, cheese, onion and beans
Let’s get started!
Cincinnati Style Chili
serves 6, heartily
small stock pot or a large-sized saucepan, 2 pounds of lean ground beef, beef stock, water, apple cider vinegar, crushed tomatoes in juice, Worcestershire Sauce, fresh garlic cloves or the equivalent of dry or granulated garlic, chili powder, cumin, cinnamon, allspice, clove, bay leaf, sweet paprika, cocoa powder, cayenne pepper, salt, black pepper, chopped onion to taste, cooked spaghetti, canned pinto or chili beans, shredded cheddar cheese, oyster crackers
Crumble the Raw Meat into the Liquid
Combine 1 qt beef stock and 1 qt water in your stockpot or large saucepan and bring to a low boil. Steadily crumble 2 pounds of lean, uncooked ground beef into your simmering stock.
While the Meat Simmers Measure Out the Following Ingredients and Set Aside
Combine 2 T apple cider vinegar and 1 T Worcestershire
Open 2 cans of crushed tomatoes in juice
Combine your dry ingredients:
1 t garlic powder (or equivalent 2 large cloves, minced)
2 T chili powder
2 t ground cumin
1 t ground cinnamon
1 t ground allspice
1/4 t ground clove
1 bay leaf
1 t sweet paprika
1 1/2 T cocoa powder
1/2 t cayenne pepper
1 1/2 t salt
1/2 t ground black pepper
Stir in the Remaining Wet and Dry Ingredients continuing to Simmer, Uncovered, for About 2 More Hours. Your Chili Will Thicken as it Reduces.
About a half hour before serving, prepare your spaghetti according to the directions on the package, grate your cheese, chop your onion and heat the beans.
Step Four: Put it all together, your way
2 Way is sauce over spaghetti.
3 Way adds cheese.
4 Way adds beans or onions. I don’t like the beans so I stop here.
5 Way is EVERYTHING!
Stir in some oyster crackers to sop up the liquid that gathers under the spaghetti.
